Recipe Of Cheese Eggplants


Ingredients
  • Eggplants(round) _ Half Kg
  • Cottage Cheese _ 2 Packets
  • Chopped Almonds _ 10
  • Roasted Cumin Seeds _ 1 Tea spoon
  • Crusted Red Chilli _ 1 Table spoon
  • Crushed Black Pepper _ 1 Tea spoon
  • Salt _ To taste
  • Mint Leaves(chopped) _ Half Brunch
  • Green Chillies (Chopped) _ 4
  • Lemon _ 2
  • Oil _ For Frying

Method

  • Cut eggplant into rounds and soak into salt water. 
  • Heat oil in a wok and fry eggplants until golden. 
  • Mix cottage cheese, almonds, cumin seeds, red chillies, green chillies, mint leaves black pepper salt and lemon juice in a bowl. 
  • Layer cheese mixture on each eggplants slices. 
  • Bake in a baking dish in a preheated oven for 5 minutes. 
  • Serve hot cheese eggplants for lunch.
