Tortellini and Spinach Soup


  • 5 cloves garlic, thinly sliced
  • 1/3 cup dry white wine
  • 3 cans (about 15 oz each) fat free, low sodium chicken broth
  • 1 Tbsp. olive oil
  • 2 pkg (9 oz each) fresh 3 cheese tortellini
  • 1 1/4 cups chopped fresh tomato
  • 1 bag (6 oz) baby spinach
  • 1 Tbsp. butter


  • Heat the olive oil in a Dutch oven, over medium high heat. Add the garlic and cook for 30 seconds. Stir in wine and broth. Bring to a boil and cook for 2 minutes. Add tortellini, cook for 6 minutes. Add tomato and spinach and cook for 2 more minutes. Stir in the butter till it melts, and serve the soup.
