Vegetable Bean Soup


Ingredients

  • 4 cups water
  • 1/2 cup finely chopped celery (about 2 stalks)
  • 1/2 large onion, chopped (or 1 med.)
  • 2 cups packaged coleslaw mix
  • 1 28 oz can diced tomatoes, un-drained
  • 1 tsp dried parsley flakes or 1 tbsp fresh
  • 1 tbsp chili seasoning mix
  • Salt and pepper to taste
  • 16 oz can pinto beans, rinsed and drained
  • 16 oz can red kidney beans, rinsed and drained

Method

  • In an extensive sauce dish, consolidate all fixings. Blend well. Heat to the point of boiling. Lower warmth. Cover and stew 30 minutes, mixing every so often.
