Baked Potato Soup


Ingredients

  • 4 large baking potatoes
  • 1/2 cup flour
  • 6 cups skim milk
  • 1/2 cup reduced calorie margarine
  • 2 teaspoons pepper
  • 1 medium onion, chopped
  • 4 slices cooked bacon, crumbled
  • 6 ounces light sour cream
  • 1 teaspoon salt
  • 2 green onions, chopped

Method

  • Wash potatoes and prepare at 400 degrees for 60 minutes, or until done. Cool. Cut potatoes in 1/2 inch 3 D shapes. It is not important to peel skins. Melt margarine in substantial skillet over low warmth and include flour, mixing until smooth. Cook one moment, blending always. Over medium warmth bit by bit include drain and mix continually until blend thickens and bubbles. Include potatoes, salt, pepper, onions and bacon. Cook until altogether warmed and onions delicate. Soup will thicken more as potatoes mollify. Include harsh cream and blend before serving.
