Summer Squash Salad


Ingredients

  • 3 cups julienne summer squash, 2 inch pieces
  • 1 16 ounce package rotini or bow tie pasta, cooked
  • 1 1/2 cups chopped tomatoes
  • 1 cup shredded lowfat mozzarella cheese, shredded
  • 2 teaspoons sugar
  • 1 tablespoon red wine vinegar
  • 1/3 cup lemon juice
  • 1 can rinsed and drained garbanzo beans
  • 1/4 cup fresh chopped basil
  • 1/2 teaspoon pepper
  • 3 tablespoons olive oil

Method

  • Wash and deplete cooked pasta and spot in vast dish. In little bowl blend basil, lemon juice, sugar, pepper, oil and vinegar. Add blend to pasta. Hurl well to coat and include remaining fixings. Chill before serving.
