Tomato Asparagus Salad


ingredients

  • 4 cups romaine lettuce, torn
  • 12 cherry tomatoes, halved
  • 4 romaine lettuce leaves
  • 1 lb. fresh asparagus, trimmed
  • 2 Tbsp. parmesan cheese, shredded
  • 1/3 cup low fat Italian salad dressing

method

  • Cook asparagus in bubbling water 5-6 minutes or until fresh delicate; dive in ice water to cool and stop cooking.
  • Line a 11 x 7 inch dish with romaine leaves; top with torn romaine. Organize asparagus and tomatoes on top and shower with Italian dressing. Sprinkle with cheddar and chill 1 hour before serving.
